Medieval cooking class

There are some beautiful recipe manuscripts left to us from the Middle Ages. The oldest ones were written in the Middle East in the 10th century. From the 12th century onwards cookbooks were written in Europe too. In the Medieval cooking class, we are going to cook from a variety of these cookbooks.

Medieval recipes & flavours

All the cookbooks were written for the elite. Therefore they contain luxury ingredient for that time. Spices, and in the late Middle Ages also sugar, dominated the flavour palate. Meat and fish are the main ingredients. But there are also very nice recipes with delicious vegetables, fruits, herbs and dairy products.

The medieval kitchen has rich and strong flavours. It is spicy, sour and sweet. You are getting to know some forgotten ingredients in this cooking class, like long pepper, tail pepper, grains of paradise and verjus. You will conjure up the flavours from 500 years ago!

Cooking class

The Medieval cooking class starts with a medieval aperitif and some appetizers. Meanwhile, we give an entertaining presentation about cooking and eating in the Middle Ages. While you are cooking, you will discover many more secrets about medieval ingredients, forgotten flavours and ancient dishes. Afterwards, you take home all the recipes used in the cooking class, so you can cook them at home as well.

You can book this cooking class with a group of 8 to 18 people. We offer them every day of the week. They can be booked in either the afternoon or evening, at any time. The cooking class lasts approximately 4 hours. Prices include all food and drinks.
